Marinade two or three chicken breasts in Greek dressing and cook on grill.
Prepare Carolina rice and cow peas per instructions.
Cube grilled chicken breasts and stir in prepared peas and rice. Put mixture in an appropriate-sized casserole dish. Sprinkle mozzarella cheese on top.
Preheat oven 375 degrees. Cook for 10 to 12 minutes or until cheese melts.
Serve immediately. Carolina Corn Bread does go well with this delicious dish
If you don’t want to grill or if it’s winter, grill chicken in oven and cube. It’s almost as tasty.
